Foxtail millet, or Italian millet, is a widely cultivated strain of cereal grass and an easy-to-prepare nutritional powerhouse. With roots in India and Northern China going back at least 8,000 years, foxtail millet has been a staple food crop for centuries, especially in dry or arid regions. Foxtail millet is a tiny, light yellow seed, and some research indicates that it has been mentioned (as priyangava) in some of the oldest Yajurveda texts, thus indicating that this millet was consumed widely even before the Indian Bronze Age (4,500 BC). Happiest Harvest’s organic foxtail millet is grown in organic farms across India and is harvested by hand, dried in the sun, and then threshed to obtain the grain.
