Edible seeds from the squash fruit pumpkin, pumpkin seeds (also known as pepitas) are flat and dark green and have a subtly sweet, nutty flavor. Happiest Harvest’s organic pumpkin seeds are harvested after the pumpkin matures. The fruit is halved, and the seeds are scooped out. Then the seeds are separated from the pumpkin flesh by rubbing over a sieve and then winnowing. The seeds are hand washed and then dried in the sun.
